Gingerbread man

The best time of the year, isn’t it December? When you equally divide your free time between cooking, eating and watching Christmas movies with your loved ones?

So why not starting this journey with a sweet little companion: this gingerbread man will help you get through the end of the year for sure.

Ingredients

  • Sugar mix
  • 75 g soft brown sugar

  • 34 g maple syrup

  • 23 g molasses

  • 1½ tsp cinnamon

  • 1 tsp ginger powder

  • ⅛ tsp ground nutmeg

  • 1 orange slice [1]

  • Flour Mix
  • 95 g vegan butter

  • 225 g cream flour

  • ½ tsp baking soda

Directions

  • Add all the “sugar mix” ingredients to a pot and cook on medium/low until it start bubbling. Then stop the heat. Let it cooled a little bit.
  • Add the vegan butter, stir until it’s melt.
  • Add the cream flour, the baking soda and stir until a dough is formed.
  • Form a ball, wrap it in cling film and place it in a cool place (like a fridge) for about 1h30.
  • Once the dough is cooled, preheat the oven at 180°C
  • Lay it down with a rolling pin until it’s half a centimeter height. Using the gingerbread man cutter, cut as many shapes you can.
  • With the rest of the dough form a ball again and execute the previous step until you are running out of dough.
  • Place all the gingerbread men on a greased oven tray and bake for 10 minutes. Then let them cool at room temperature on a cooling rack (or a oven grill).
  • Once cooled, decorate as you wish. I like to use only powder sugar.

Notes

  • [1] you can add orange zest for an extra orange flavor!
