I’ve lived a couple of years in Luxembourg and the 6th of December is a special treat day for the Luxembourgers: it’s Boxemännchen day (little brioche men). It’s really something that people likes to offer for St. Nicolas day, and kids and grown ups both enjoy it for breakfast or as a snack.

- Dough ingredients
240 g lukewarm soy milk
1 tsp yeast
45 g coconut sugar
350 g flour
67 g vegan butter
½ tsp salt
- Next day
40 g flour
3 tbsp maple syrup
2 tbsp caster sugar
Directions
- Place all the dough ingredients in the bowl of your stand mixer or bread maker. Knead the dough for 10 minutes.
- Once done, the dough should be quite sticky.
Tightly wrap it in cling film and place it in the fridge for 8h or overnight. - When the rest time is over, preheat the oven at 180°C.
- Sprinkle the remaining flour on your kitchen counter and knead the dough a little bit to make it less sticky.
- Then lay it down with the rolling pin (should be about a centimeter height).
- With the gingerbread man cutter, cut as many shapes you can.
- With the rest of the dough form a ball again and execute the previous step until you are running out of dough.
- Place all the brioche on a baking paper sprinkled with sugar. Put the oven tray in the warmed oven and bake for 8 minutes. Remove from the oven and brush them with a generous amount of maple syrup.
Place them back in the oven for 5 minutes.
Then let them cool at room temperature on a cooling rack (or the oven grill). - You can eat them directly when they are still warm or keep them in an air tight container for a few days.
