  • 60 ml olive oil

  • 3 tbsp cashew nuts [1]

  • 3 tbsp nutritional yeast

  • Place all the dough ingredients in the bowl of a stand mixer. Using the dough hook knead the dough for about 10 minutes. Then cover the bowl and place it in a warm place to rest for 2 hours.
  • In the mean time prepare the basil paste by adding all the ingredients to a blender. Blend until all the ingredients are well mixed together.
  • After 2 hours, preheat the oven to 180°C.
  • Lay the dough in a rectangular shape (should be around half a centimeter height). Spread the basil paste all over. Then roll the dough and cut it evenly into 12 pieces.
  • Place all the pieces on an a greased oven tray and baked until golden and crispy (around 12 minutes)

Notes

  • I prefer to use roasted cashews, but raw or soaked will do it as well.
