Best apple cake

Ingredients

  • Cake
  • 250 g flour

  • 2tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 90 g golden granulated sugar

  • 120 g soy milk

  • 10 g apple cider vinegar

  • 1 tsp vanilla extract

  • 120 g vegan butter melted

  • 100 g soy yogurt

  • 450g apple chopped (around 2 large apples)

  • Crumble (streusel)
  • 75 g flour

  • 1 tsp cinnamon

  • 35 g golden granulated sugar

  • 35 g vegan butter

Directions

  • Preheat the oven at 180ºC. Prepare a 22cm springform cake pan: line the bottom with parchment paper, grease the bottom and sides and lightly flour the sides.
  • In a mixing bowl, whisk together the soy milk and the apple cider vinegar. Set aside
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
  • Add the sugar, vanilla extract, melted butter and soy yogurt to the soy milk preparation and whisk together.
  • Prepare the crumble: in a bowl mix with your hand the flour, the cinnamon, the sugar and the butter together (the butter should be well incorporated).
  • Pour the liquid mix in the flour one and stir together.
  • Transfer the batter to the cake pan. Spread the chopped apple on top of it. Crumble the streusel on top of it.
  • Bake in the preheated oven for 20 minutes covered (I used another cake pan but you can use aluminium foil or anything else that can go to the oven and cover the cake pan) and then 45 minutes uncovered or until a skewer inserted in the cake comes out clean.
  • Allow it to cool down for at least 10 minutes before removing from the pan.
